Italian Topped Tomatoes

  • 2 Tbsp Dijon mustard
  • 3 medium tomatoes, cut in half crosswise
  • 1/8 tsp salt
  • 1/4 cup Italian seasoned breadcrumbs
  • 1/4 cup shredded Parmesan cheese
  • 2 tbsp butter, melted
  • 1 tsp chopped fresh parsley

1.  Spread mustard evenly over cut side of each tomato half; sprinkle evenly with salt.  Place tomato halves, cut sides up, in an 11 x 7 baking dish

2.  Combine breadcrumbs and next 3 ingredients in a small bowl.  Gently spoon breadcrumb mixture evenly over each tomato.  Bake at 450 degrees for 12 – 15 minutes or until browned.
