How about a 2-ingredient recipe that’s easy & tastes great too!
If I know that I’m going to be home late after work due to a meeting, errands, etc. then I use my crockpot.*Love* my crockpot!
I often place skinless, boneless chicken breasts in the crockpot then dump a jar of salsa on top.Turn on low and it’s ready when you get home.Sometimes I’ll add diced onion or taco seasoning to the chicken before topping with salsa.
The chicken will be so moist and tender it will shred easily to use in a variety of recipes.Shred the chicken for enchiladas, use in omelets, salads, wraps, etc.
Cook enough chicken to use all week long to simplify your meal planning. This recipe would also work for lean beef or pork.
Come back Wednesday for a chicken enchilada soup recipe that is de-licious!
Happy cooking!
